Recipes: Curried Lentils and Spinach with Organic Brown Rice

1 diced onion (sauteed)
10 coarsly chopped cloves of garlic
10 small chopped tomatoes
4 med/small chopped carrots (sauteed with onion, tomatoes, and garlic)
small handful of Sweet Bombay Yellow Curry Powder
a couple pinches of Cumin
lots of dried parsley
9 cups of water
3 cups of dry (washed) lentils
1 cube of vegan bouillion
1 small can of organic tomato paste (from costco)
3 large handfuls of organic baby spinach
Sea Salt and Pepper added to taste.
a handful of fresh diced parsley (added after completely cooked for extra flavor & garnish)
Brought everything to a boil, then reduced heat to low and simmered until lentils were tender (about an hour). Served over brown rice.

  1. About how many servings do you think this makes? I am hungry and cold and this sounds super good. :)
