Recipes: Homemade Gnocchi

So easy, so delicious!
-8 baked potatoes, mashed (skin and all) with 2 cups of whole wheat flower (into a dough).
-I add dried basil or parsley into the dough for added flavor (optional).
-Roll dough onto flour-sprinkled surface, into small balls (for prettier appearance), or roll into long rope and chop into bite-sized bits (quicker, not as pretty but just as tasty)
-Set aside on a pan or plate lightly dusted with more flour, and sprinkle flour on top to keep from sticking together
-Put them all in boiling salted water, and immediately take them out when they start floating (only 3-5 minutes)
-Great with marinara, pesto, or garlic "butter" sauce.
-Feeds four hungry tummies.
